Beet and Ricotta Dip

Yield: 4 servings

Preheat oven to 400°F (200°C).Wrap each beet in a piece of aluminum foil and place it on a rimmed baking sheet. Transfer into the oven and roast until the beets are tender when pierced with a knife, around 35 to 40 minutes. Allow beets to cool slightly and peel under running water. Transfer beet into the bowl of a food processor and add the ricotta, lemon juice, sumac, and a large pinch of salt and pepper. Process until a smooth and creaming dip forms. If needed, you can add a splash of water to adjust the consistency. Taste and adjust the seasoning and place the dip into a serving dish. Garnish with fresh mind and serve. Nutrition Facts
